Recipe: Vegan Sweet Potato Toast with chive cream cheese, VDF Carrot turmeric granola, manuka honey and parsley

Have you heard sweet potatoes 🍠 are the new toast!? And these sweet tater slices topped with ✨Carrot Turmeric Garden Granola ✨by @alisondoesitbetter really got our attention! Enjoy for breakfast, lunch or any time of day!

Recipe:
Vegan Sweet Potato Toast with chive cream cheese, VDF Carrot turmeric granola, manuka honey and parsley

Ingredients

  • 1 sweet potato

    • the bigger and relatively tube shaped sweet potatoes will be easier to cut

  • 1-2 tbsp of @kitehillfoods chive cream cheese⁣⁣⁠

  • 1 Half of a mashed avocado 

  • salt & Pepper to taste

  • 1/3-1/2 cup Victory Dance Foods Carrot Turmeric Garden Granola

  • small bunch Parsley⁣⁣⁠ (washed and dried)

  • 1-2 tbsp manuka honey ⁣⁣⁠

Steps:
1. wash and scrub your sweet potato
2. Pat dry with paper towel or let air dry
3. Slice ! Start by slicing one end of the sweet potato so that it can sit on the cutting board. Using a large sharp knife cut the sweet potato lengthwise into 1/4 – 1/3 inch slices. 
tips: You don’t want to cut it to thin or the slices won’t hold up. A mandolin slicer can also be used if you have one.
alternative method: You can boil the sweet potato for 5 minutes then let it fully cool before slicing it.
4. Place slices in toaster. you will have to experiment here on settings the goal is to get them to be fork tender. (a conventional toaster or toaster oven can be used)
5. let cool briefly on wire rack
6. add toppings! in the order they are listed above!
