For the Baked Pears

4 ripe pears Anjou or Bosc
2 Tablespoons melted butter or coconut oil for vegan
2 Tablespoons Honey or Maple syrup
1 teaspoon cinnamon
1 ⅓ Cups Greek Yogurt or coconut yogurt for vegan

For the toppings

Instructions

Prepare & Bake the Pears

  1. Preheat your oven to 375º F.

  2. Halve the pears and remove the cores.

  3. Place the pear halves in a baking dish, cut side up.

  4. Drizzle the melted butter (or coconut oil) and honey (or maple syrup) over the pears.

  5. Sprinkle with cinnamon for warm, spiced flavor.

  6. Bake the pears in the oven for 25-30 minutes, or until they are tender and golden.

Assembling the Pears

  1. Remove pears from oven and allow to cool slightly

  2. Arrange pears on 4 serving plates

  3. Sprinkle ⅓ Cup Garden Granola Beet Ginger on each serving

  4. Place ⅓ cup Greek Yogurt alongside of pears

  5. Garnish with 3 Fresh Mint leaves
