Roasted Beet Salad with Goat Cheese and Toasted Nuts

Yields: 6 servings
Ingredients
6 medium red beets
2 cups salad greens (arugula or spring mix)
½ green apple, thinly sliced
½ cup dried cranberries
4 oz goat cheese (approximately 6 tablespoons)
½ cup toasted nuts (pecans or walnuts)
1 ½ cups Garden Granola Beet Ginger®
Balsamic vinaigrette (homemade or store-bought)
Instructions
Prepare the beets
Remove beet tops, scrub thoroughly, and allow to air dry.
Preheat your oven to 400ºF.
Wrap each beet tightly in aluminum foil.
Place the foil-wrapped beets on a sheet pan and roast for 50–60 minutes, or until the largest beet is easily pierced with a small, sharp knife.
Remove beets from the oven, unwrap, and let cool for 10 minutes.
Peel the beets using a small, sharp knife and slice into ¼-inch thick rounds.
Toast the nuts
Heat a dry skillet over medium heat.
Add the nuts and toast, stirring frequently, until fragrant (about 3–5 minutes).
Remove from heat and let cool.
Assemble the salad
For each of the six servings:
Place ⅓ cup salad greens on a plate or in a bowl.
Add 3–4 apple slices.
Sprinkle 4 teaspoons of dried cranberries and 4 teaspoons of toasted nuts.
Arrange ⅔ cup of sliced beets over the greens.
Crumble 1 tablespoon of goat cheese on top.
Sprinkle ¼ cup Garden Granola Beet Ginger® over the salad.
Drizzle balsamic vinaigrette over everything.
Final Touches
Season with sea salt and freshly ground black pepper to taste.
