Ingredients

For the Salad:

  • 2 large avocados, peeled and diced

  • 1 tablespoon lemon juice

  • 1 (14 oz) can hearts of palm, drained and sliced

  • 1 (14 oz) can artichoke hearts, drained and quartered

  • 1 pint grape tomatoes, halved

  • 2 English cucumbers, quartered and diced

  • 1 cup Garden Granola® Kale Matcha (or 2–3 tablespoons per serving)

For the Lemon Vinaigrette:

  • ½ cup extra virgin olive oil or avocado oil

  • 2 tablespoons white wine vinegar

  • 2 tablespoons lemon juice

  • 1 teaspoon honey

  • 1 teaspoon Dijon mustard

  • ¼ teaspoon sea salt

  • 1 teaspoon chopped fresh Italian parsley

  • ¼ teaspoon Italian seasoning

  • 3 cloves garlic, finely minced

  • Black pepper to taste (optional)

Instructions

Prepare the Salad:

  1. Slice the hearts of palm and quarter the artichoke hearts.

  2. Rinse and halve the grape tomatoes.

  3. Quarter and dice the cucumbers.

  4. Peel and dice the avocados, then toss them with lemon juice to prevent browning.

  5. In a large bowl, gently combine all salad ingredients.

  6. Cover and refrigerate until ready to serve.

Make the Vinaigrette:

  1. Add all dressing ingredients to a lidded jar.

  2. Shake vigorously until fully combined.

  3. Use immediately, or store in the fridge for up to 5 days.

  4. Let the dressing come to room temperature and re-shake before serving.

To Serve:

  1. Gently toss salad with vinaigrette.

  2. Top each serving with 2–3 tablespoons of Kale Matcha Garden Granola® just before serving for a fresh, satisfying crunch.
