This delicious recipe can be made as a dessert with your choice of ice cream or non-dairy ice cream. For breakfast, just substitute your favorite yogurt for the ice cream.

Ingredients

  • ½ stick butter

  • ¼ cup brown sugar

  • 1 large peach, halved and pitted

  • 2 scoops vanilla ice cream or Oatly non-dairy vanilla (or ½ cup yogurt for breakfast)

  • ½ cup Cherry Almond Granuesli®

Instructions

Brown Butter Sauce

  1. Place the butter and brown sugar in a saucepan over medium heat, stirring constantly until mixture just begins to boil.

  2. Remove from heat and let cool.

Grilling the Peach Halves

To Cook Indoors:

  1. Heat a cast iron griddle pan over medium heat.

  2. Brush pan with melted butter.

  3. Place peaches cut side down.

  4. Brush back of peaches with melted butter.

  5. Cook until peaches are soft and have grill marks on the cut face, then remove from heat.

Outdoor Grill:

  1. Clean grill and brush with olive oil.

  2. Brush the cut face of the peaches with melted butter.

  3. Place peaches face down on the grill and brush the back with melted butter.

  4. Cook until peaches are soft and have grill marks on the cut face, then remove from heat.

Serving

  1. Place peach cut side up on plate.

  2. Fill with either 1 scoop of your choice ice cream or ⅓ cup coconut or Greek yogurt.

  3. Sprinkle on ¼ cup Cherry Almond Granuesli®.

  4. Drizzle top with brown butter sauce.
