Wake up to a rainbow with this healthy, kid tested and approved, meal prep-friendly breakfast Recipe for Chia Pudding prepared 3 different ways by the super talented and lovely Melissa @the_queenship !!!

In addition to being a total feast for the eyes and tastebuds,  these chia pudding + granola parfaits are gluten-free, veggie-powered, full of superfoods AND packed with protein and fiber that will leave you (and your crew) feeling satisfied, satiated and so energized for your day!⁣ 

Fun Fact #ChiaPudding 1 oz of chia pudding, about 2 tablespoons contains 11 grams of protein and 4 grams of fiber!!!


Overnight Chia Pudding Granola Parfaits, 3 ways

⁣Make the chia pudding the night before and let it firm up in the fridge for morning.⁣

3 JARS⁣

CLASSIC (EACH JAR)⁣

  • 4 tbsp chia seed⁣

  • 1 c. coconut almond milk ⁣

  • 1 tbsp. Maple syrup ⁣

  • 1 tsp. Vanilla extract (or vanilla bean paste)⁣

  • wee pinch of salt⁣

MATCHA ⁣

  • Stir in 2 tsp. matcha powder into the chia mixture.⁣


PEANUT BUTTER

  • Stir in 1 tbsp of softened peanut butter into the chia mixture.⁣

Combine ingredients in jars (make sure there’s enough room for the chia to expand)⁣ and leave in fridge overnight!

⁣Next morning add your favorite toppings. ⁣

HONEY ROASTED PERSIMMON TOAST!

“quite possibly one of my favorite toasties”

ingredients:
• Persimmons 1-2
• honey
• coconut oil
• bread (I used Young Kobras GF bread)
• coconut yogurt ( I used Coco June organic yogurt)
• date syrup (I used Dvash Organics Date syrup)
Granola (I used Victory Dance Foods Carrot Turmeric Granola )

Method:⁣

1) chop up a couple of persimmons. Place on a baking sheet with parchment paper and coat in equal part honey & coconut oil. I used about 1 tbsp of each and added a little water to help mix. ⁣

2) bake for about 15 minutes at 375. I broiled them on high for a few minutes too⁣

3) toast some bread. Top with some coconut yogurt, roasted persimmons, granola, and date syrup. Soo good!!⁣

This luscious no-bake and nearly raw cheesecake is not only beautiful on the outside it’s full of healthy swaps, superfoods and a totally unique flavor that sets it apart from the rest of the cheesecake pack! This beautiful and nourishing dessert uses our Garden Granola in the crust and fresh ginger in the filling that lends the perfect spicy twist. You will be sure to crave this creamy indulgent treat and it’s beautiful color and uniquely delicious taste make it perfect for Valentines Day and any festive occasion! And if you aren’t sold yet, it’s freezer friendly, vegan, gluten-free and refined sugar free!

Ingredients:

Crust:

  • Heaping 1 cup mixed nuts

  • 1/2 c pepitas

  • 1/3 c Victory Dance Foods Garden Granola

  • 4 large dates, pitted and quartered

  • Pinch salt

  • 1/2 tsp cinnamon

  • 2 flax eggs (2 tbsp ground flax + 3 tbsp water)

Filling:

  • 1 3/4 c blanched sliced almonds, soaked for at least 2 hours, drained and rinsed

  • 1/4 tsp sea salt

  • 1/4 raw honey or maple syrup

  • 2 tbsp fresh squeezed orange juice

  • 1 orange, peeled 

  • 1 inch piece fresh ginger

  • 4 drops Orange vitality oil

  • 1/3 c melted cacao butter (melt in a dehydrator or over the lowest setting on the stovetop)

  • Splash vanilla extract

  • Optional: a few drops vanilla stevia, or additional sweetener,

    to taste

Beet & berry swirl:

  • 1 medium beet, cooked and chopped

  • 1/2 c berries

  • 1/4 filling mixture 

  • More orange juice, to taste
