Ingredients

  • 1 slice gluten-free bread

  • ½ avocado, smashed

  • ½ teaspoon lime juice

  • ⅓ cup full-fat cottage cheese

  • 1 hard-boiled egg, sliced

  • ¼ cup Garden Granola® Carrot Turmeric

  • Thinly sliced green onion tops (for garnish)

  • Sea salt, to taste

Instructions

  1. Hard-Boil the Egg: Place egg in a saucepan and cover with cold water (1 inch above the egg). Bring to a boil, then turn off heat, cover, and let sit for 10–12 minutes. Transfer to an ice bath, cool 5 minutes, peel and slice.

  2. Mash the Avocado: In a small bowl, mash avocado with lime juice and a pinch of sea salt.

  3. Toast the Bread: Toast the gluten-free bread until golden and crispy.
