Ingredients

Dry Ingredients

  • 1 cup gluten-free flour

  • 1 tbsp coconut sugar

  • 2 tsp baking powder

  • 1 tsp baking soda

  • ½ tsp kosher salt

Wet Ingredients

  • 1½ cups buttermilk (or 1 cup almond milk for dairy-free option)

  • 1 large egg (or ¼ cup mashed banana for plant-based option)

  • 1 tsp vanilla extract

  • 2 tbsp melted butter (or dairy-free butter substitute)

Toppings

  • Maple syrup

  • Butter or vegan butter substitute

  • Caramelized banana slices

  • ¼–1 cup additional Granuesli® Cherry Almond, to taste

Instructions

  1. Whisk the dry ingredients:
    In a large bowl, combine the flour, coconut sugar, baking powder, baking soda, and salt.

  2. Combine the wet ingredients:
    In a separate bowl or liquid measuring cup, whisk together buttermilk (or almond milk), egg or banana, and vanilla extract. Pour into the dry ingredients and stir until just combined.

  3. Add the butter:
    Stir in melted butter until incorporated. Do not overmix.

  4. Cook the pancakes:
    Preheat an electric griddle or skillet over medium-high heat. Lightly grease with butter or oil. Portion batter using a large scoop, then sprinkle Granuesli® Cherry Almond on top of each pancake.

  5. Flip and finish:
    Cook for about 2 minutes, until bubbles form on the surface. Flip and cook another 1–2 minutes until golden.

  6. Serve:
    Stack warm pancakes and top with caramelized bananas, maple syrup, and an extra handful of Granuesli® Cherry Almond for crunch.
