Ingredients
Dry Ingredients
1 cup gluten-free flour
1 tbsp coconut sugar
2 tsp baking powder
1 tsp baking soda
½ tsp kosher salt
Wet Ingredients
1½ cups buttermilk (or 1 cup almond milk for dairy-free option)
1 large egg (or ¼ cup mashed banana for plant-based option)
1 tsp vanilla extract
2 tbsp melted butter (or dairy-free butter substitute)

Instructions
Whisk the dry ingredients:
In a large bowl, combine the flour, coconut sugar, baking powder, baking soda, and salt.Combine the wet ingredients:
In a separate bowl or liquid measuring cup, whisk together buttermilk (or almond milk), egg or banana, and vanilla extract. Pour into the dry ingredients and stir until just combined.Add the butter:
Stir in melted butter until incorporated. Do not overmix.Cook the pancakes:
Preheat an electric griddle or skillet over medium-high heat. Lightly grease with butter or oil. Portion batter using a large scoop, then sprinkle Granuesli® Cherry Almond on top of each pancake.Flip and finish:
Cook for about 2 minutes, until bubbles form on the surface. Flip and cook another 1–2 minutes until golden.Serve:
Stack warm pancakes and top with caramelized bananas, maple syrup, and an extra handful of Granuesli® Cherry Almond for crunch.
