Ingredients
Soup
2 tablespoons olive oil
1 medium onion, diced
3 cloves garlic, minced
3 tablespoons fresh ginger, grated or finely diced
6 cups carrots, peeled and chopped
3½ cups vegetable broth
1 bay leaf
1 teaspoon salt

4 tablespoons coconut cream (optional)
4 tablespoons fresh cilantro leaves
Instructions
1. Sauté the Vegetables
In a large pot, heat the olive oil over medium-high heat. Add the diced onion and chopped carrots. Cook for about 6 minutes, stirring occasionally, until the carrots begin to soften.
2. Add Aromatics
Stir in the garlic, ginger, and salt. Let the flavors mingle for about 2 minutes.
3. Simmer the Soup
Pour in the vegetable broth and add the bay leaf. Bring everything to a boil, then lower the heat and cover. Simmer gently for 20–30 minutes, until the carrots are very tender.
4. Blend Until Smooth
Discard the bay leaf. Use an immersion blender to purée the soup until smooth. If using a countertop blender, let the soup cool slightly and blend in batches.
5. Serve and Top
Ladle into bowls. For added creaminess, swirl in 1 tablespoon of coconut cream per bowl. Finish with ¼ cup of Garden Granola® Carrot Turmeric and 1 tablespoon of fresh cilantro leaves for brightness and crunch.
