Ingredients

  • 4–6 Medjool dates, pitted

  • 1 (8 oz) bag Victory Dance Foods Kale Matcha Garden Granola®

  • ¼ cup peanut butter

  • ¼ cup shelled pistachios

  • 2 tablespoons chia seeds

  • ¼ cup maple syrup or agave

  • 2 tablespoons matcha powder, divided

  • ½ teaspoon sea salt

 Instructions

  1. In a food processor, combine all ingredients except 1 tablespoon of the matcha powder. Pulse until the mixture becomes sticky and holds together easily.

  2. Using a small cookie scoop or spoon, portion the mixture and roll into bite-sized balls.

  3. Roll each ball in the reserved matcha powder for a vibrant green finish.

  4. Place bites on a parchment-lined baking sheet. Store in an airtight container in the refrigerator for up to 1 week.
