Ingredients

  • 4 slices gluten free sourdough bread

  • 15 oz whole milk ricotta cheese (for vegan- plant based ricotta)

  • 1 tablespoon honey (for vegan substitute maple syrup)

  • 1 tablespoon lemon juice

  • 4 small-medium sized beets, about 2-3 inches in diameter, roasted (can be made the day before and refrigerated)

  • 1 cup Garden Granola Carrot Turmeric

  • Pinch of sea salt

Directions

Roasting the Beets

  1. Preheat oven to 400º F

  2. Trim beet greens leaving ¼ inch of stem to decrease bleeding.

  3. Wash the beets.

  4. Place each beet in a square of aluminum foil

  5. Rub a small amount of olive oil on the beet

  6. Seal the foil tightly around the beet so that steam will stay in

  7. Roast 50 minutes if small, 60 if medium size

  8. Remove from oven and allow to cool slightly.

  9. Remove foil

  10. Skins should slip off easily

  11. Allow to cool before slicing

Assembling the Ricotta Toast

  1. In a food processor or high speed blender, place ricotta, lemon juice, honey and blend until smooth

  2. Toast gluten free sourdough bread

  3. Slice the roasted beets

  4. Using a pastry bag or plastic ziplock bag with the corner cut off, pipe the whipped ricotta onto toast in a zigzag motion.

  5. Arrange slices of beets onto the toast

  6. Top with Garden Granola Carrot Turmeric and finish with a pinch of sea salt
