This spring-inspired salad is all about texture, freshness, and bold flavor. A colorful array of crisp veggies is layered over a base of creamy yogurt herb dressing, then finished with a vibrant crunch of Beetroot Ginger Garden Granola®. Ingredients

For the salad

1 watermelon radish, thinly sliced

• 1 regular radish, thinly sliced

• 4–5 leaves endive

• 3–4 snap peas, sliced lengthwise

• 3–4 cherry tomatoes, halved

• ½ cucumber, thinly sliced lengthwise

• 1 small shallot, thinly sliced

Toppings

2 teaspoons chopped pistachios

• 2 sprigs fresh dill

• ⅓ cup Beetroot Ginger Garden Granola®

For the Yogurt Herb Dressing:

1 cup Greek yogurt

• ¼ cup finely chopped chives

• 2 tablespoons finely chopped Italian parsley

• 2 tablespoons finely chopped cilantro

• 2 garlic cloves

• ½ lemon, juiced

• 1 teaspoon honey

Instructions

1. Make the dressing: In a blender or food processor, combine Greek yogurt, chives, parsley, cilantro, garlic, lemon juice, and honey. Blend until smooth. Adjust seasoning to taste.

2. Prepare the vegetables: Slice all salad ingredients as directed.

3. Assemble: Spread 1–2 tablespoons of dressing onto each serving plate.

4. Arrange sliced vegetables and endive leaves on top of the dressing.

5. Sprinkle with pistachios, fresh dill, and Garden Granola® Beetroot Ginger just before serving.
