2 ripe bananas, sliced
2 cups full-fat cottage cheese
2–3 tablespoons honey (to taste)
1 teaspoon vanilla extract
2 tablespoons peanut butter, divided
3 tablespoons chocolate chips, melted
¾ to 1 cup Garden Granola® Beetroot Ginger
Instructions
Prepare the Pan: Line a rimmed baking sheet with parchment paper or a silicone mat.
Arrange Bananas: Lay out banana slices in a 5×7 rectangle (about 35 slices).
Blend Mixture: In a blender or food processor, blend cottage cheese, 2 tablespoons peanut butter, honey, and vanilla until smooth and creamy.
Assemble Bark: Pour cottage cheese mixture over banana slices and spread evenly.
Melt Chocolate: Microwave chocolate chips in 30-second intervals, stirring until smooth.
