Ingredients
For the Salad
6–8 leaves red leaf lettuce (or mixed greens of your choice)
8 spears asparagus, blanched or grilled
⅓ cup ricotta
For the Pistachio Vinaigrette
⅛ cup shelled pistachios, roughly chopped
½ small shallot, minced
1 tablespoon champagne vinegar
1 tablespoon olive oil
Salt to taste
White pepper to taste
Make the Vinaigrette
In a small bowl, stir together the minced shallot, chopped pistachios, olive oil, and champagne vinegar. Season with salt and white pepper to taste. Set aside.
Prep the Asparagus
To Blanch
Wash asparagus and trim off the tough ends.
Bring 8 cups of water to a boil.
Add asparagus and cook for 3 minutes.
Drain and rinse under cold water to stop the cooking.
To Grill
Coat trimmed asparagus with a light film of olive oil.
Place in a grill basket over a hot grill.
Turn frequently until tender and lightly charred. Remove and set aside.
Assemble the Salad
Arrange lettuce or greens on a serving plate.
Lay asparagus spears across the greens.
Spoon most of the pistachio vinaigrette over the asparagus.
Add dollops of ricotta to the plate.
Top the ricotta with the reserved vinaigrette.
Finish with a generous sprinkle of Garden Granola® Kale Matcha.
