What Is Nice Cream?

“Nice cream” is a frozen dessert made by blending fruit (most often bananas) into a smooth, ice cream-like consistency. It’s naturally dairy-free and easy to customize with different add-ins or toppings. Melissa’s strawberry version layers ripe bananas with tart cherry concentrate and flaxseed meal for flavor and texture.

Ingredients

Nice Cream

  • 1 lb. frozen strawberries

  • 2 large frozen bananas 

  • 1 tbsp. Tart cherry concentrate

  • 1 tbsp. date syrup

  • 1 tbsp. flaxseed meal

  • Squeeze of 1/2 small lemon

  • 1/2 c. milk of choice ( I used full fat coconut milk)

Method

  1. Let frozen fruit thaw for about 15 minutes before blending.

  2. Add all nice cream ingredients to a high-powered blender, drizzling in the milk gradually while blending.

  3. Blend until smooth and creamy, stopping to scrape down the sides every 30 seconds.

  4. Scoop into bowls and top with Carrot Turmeric Garden Granola® for crunch.

Tips for Blending Success

  • Use a strong blender or food processor to achieve a creamy texture.

  • Add liquid slowly—start with less, then add more if needed for thickness.

  • Scrape sides frequently to keep the mixture even.

  • Be patient—blending may take 2–3 minutes for the right consistency.

Storage Instructions

  • Serve immediately: Best enjoyed right after blending for maximum creaminess.

  • Short-term storage: Keep in an airtight container in the freezer for up to 3 days.

  • Re-serving: Let thaw 5–10 minutes before scooping, or briefly pulse in the blender to restore texture.
