Whether you're hosting Thanksgiving dinner, planning a festive charcuterie spread, or looking for an elegant make-ahead appetizer, this gluten-free flatbread recipe delivers restaurant-quality results with minimal effort. The combination of balsamic glaze and fresh thyme elevates simple ingredients into something truly special—and it can easily be made vegan by swapping in your favorite plant-based cheese.
Ingredients:
1 sheet Dufour Gluten Free Puff Pastry
1-2 Anjou or Bosc pears, ripe but firm, thinly sliced
½-¾ cup crumbled Gorgonzola cheese (or vegan cheese of your choice)
3 teaspoons olive oil, divided
1 tablespoon balsamic glaze
1 tablespoon fresh thyme leaves
Pinch of sea salt
Directions:
Remove puff pastry from freezer and keep at room temperature for 30-45 minutes while preparing other ingredients.
Thinly slice pears.
Toss pears in bowl with 1 teaspoon olive oil to coat and set aside.
Remove thyme leaves from stems and set aside.
Preheat oven to 425°F.
Roll out the Dufour puff pastry on a lightly floured surface to 9" x 12".
Brush pastry with remaining 2 teaspoons of olive oil.
Place pastry in oven and reduce temp to 400°F. Pre-bake for 10 minutes.
Remove from oven.
Arrange pear slices on pastry and return to oven for approximately 10 minutes or until pastry is golden and firm.
Remove from oven and immediately sprinkle crumbled Gorgonzola cheese onto the hot pastry. Top with Garden Granola® Kale Matcha and fresh thyme leaves.
Drizzle balsamic glaze over flatbread and add a pinch of sea salt.
Cut lengthwise into 6 equal slices (approximately 2 inches each along the 12-inch side).
Serving Suggestions:
Serve warm as an elegant appetizer for holiday gatherings or wine night with friends. This flatbread also makes a sophisticated lunch when paired with a fresh arugula salad. For a party presentation, arrange slices on a wooden board alongside additional pear slices, nuts, and honey.
Wine Pairing:
Pair this sweet and savory flatbread with a crisp Sauvignon Blanc or off-dry Riesling to complement the Gorgonzola and pears. For red wine lovers, try a light-bodied Pinot Noir that won't overpower the delicate pear flavor.
