Ingredients

  • 1.5-2 lbs rainbow carrots (15-18 carrots)

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 teaspoon kosher salt

  • 8 oz feta cheese, room temperature

  • ¼ cup plain Greek yogurt

  • 1 tablespoon lemon juice (optional)

  • 1 cup Garden Granola® Carrot Turmeric

  • 1 tablespoon finely chopped Italian parsley

  • 1 tablespoon fresh thyme

  • 2-3 tablespoons pomegranate arils

Instructions

For the Roasted Carrots

  1. Preheat oven to 425°F.

  2. Trim tops on rainbow carrots, wash thoroughly, and pat dry (peel if desired).

  3. On a large baking sheet, toss carrots with olive oil, minced garlic, and salt until evenly coated.

  4. Arrange carrots in a single layer, avoiding overcrowding.

  5. Roast for 18-25 minutes depending on carrot thickness. After 10 minutes, turn carrots with tongs and return to oven.

  6. Check after 18 minutes for doneness. Roasted carrots should be caramelized on the outside and fork-tender.

For the Whipped Feta

  1. Place feta and Greek yogurt in a high-speed blender or food processor.

  2. Blend until smooth with no lumps.

  3. Add lemon juice to thin if desired.

To Serve

  1. Spread the whipped feta on a plate or platter.

  2. Arrange warm roasted carrots on the feta.

  4. Sprinkle with finely chopped parsley and thyme.

  5. Garnish with pomegranate arils.
