Recipe at a Glance
Ingredients
For the Apple Nachos:
4 large Honeycrisp apples (about 2 lbs), cored and sliced ¼-inch thick
2½ cups Garden Granola® Carrot Turmeric
1 cup fresh blueberries
For the Peanut Butter Drizzle:
¼ cup natural peanut butter
1–2 teaspoons water or maple syrup (to thin)
Optional Toppings:
Pinch of cinnamon or sea salt
Dairy-free chocolate chips
Coconut flakes
Instructions
Prepare the apples: Core the apples (leave skin on for color and nutrition) and slice into ¼-inch thick pieces. To prevent browning, lightly toss with a squeeze of lemon juice if not serving immediately.
Arrange the base: On a large serving platter or sheet pan, arrange apple slices in overlapping circles or rows, working from the outside in. Create 2-3 layers for that true "nacho" effect.
Add the granola: Generously sprinkle 2½ cups of Garden Granola® Carrot Turmeric evenly over the apples, concentrating on the center and letting some cascade naturally over the edges.
Add the blueberries: Scatter 1 cup fresh blueberries across the top, distributing them evenly for pops of color and flavor in every bite.
Prepare the drizzle: In a small microwave-safe bowl, warm the peanut butter for 20-30 seconds, stirring in 1-2 teaspoons of water or maple syrup until it reaches a smooth, drizzleable consistency.
Finish and serve: Drizzle the warmed peanut butter back and forth over the entire platter in a zigzag pattern. Serve immediately while apples are crisp and granola is crunchy.
Chef's Tips
- Apple variety substitutions: Gala, Fuji, or Pink Lady apples also work beautifully if Honeycrisp aren't available. Choose apples that are crisp and slightly sweet.
- Make it a meal: This can serve as a fun breakfast or snack for 6-8 people, or a dessert for 4-6.
- Prevent soggy granola: Assemble just before serving to keep the granola crunchy and the apples fresh.
- Nut-free option: Substitute almond butter or sunflower seed butter for peanut butter to accommodate allergies.
- Drizzle pro-tip: Use a fork for a rustic look, or pour the peanut butter into a squeeze bottle for more controlled, beautiful drizzle patterns.
Storage & Make-Ahead
- Best served: Immediately after assembly for maximum crunch and visual appeal.
- Prep ahead: Slice apples up to 2 hours ahead and store in a bowl of water with a squeeze of lemon juice to prevent browning. Drain and pat dry thoroughly before assembling.
- Not recommended: This dish doesn't store well assembled, as apples will brown and granola will soften. However, you can prep all components separately and assemble when ready to serve.
Variations
- Tropical Twist: Use sliced mango instead of apples, and swap blueberries for diced kiwi and pineapple chunks.
- Berry Blast: Add sliced strawberries and raspberries along with the blueberries for extra color and flavor.
- Chocolate Lover's: Drizzle melted dark chocolate alongside the peanut butter for an indulgent treat.
- Caramel Apple: Use date caramel or vegan caramel sauce instead of peanut butter for a classic fall flavor.
- Savory Spin: Skip the peanut butter and sprinkle with a pinch of sea salt and a drizzle of tahini for a more sophisticated flavor profile.
Serving Suggestions
- Perfect for: After-school snacks, party appetizers, brunch spreads, movie night treats, or a healthy dessert alternative for family gatherings.
- Pair with: Hot apple cider, herbal tea, chai latte, or cold milk (dairy or plant-based).
- Presentation tip: Use a marble slab, wooden cutting board, or white serving platter for an Instagram-worthy presentation. The contrast makes the colors pop!
