This Blue Cloud Piña Colada Smoothie is a lighter take on the viral Erewhon Coconut Cloud Smoothie—blending creamy coconut milk, mango, pineapple, and banana with a swirl of coconut yogurt “clouds” and a hint of blue spirulina. It’s topped with Garden Granola® Beetroot Ginger for a vibrant crunch and boost of flavor. Naturally gluten-free and vegan, this high-protein smoothie is refreshing, nutrient-rich, and as gorgeous as it is satisfying.

Ingredients
- 1 medium banana, frozen and chopped
- ¼ cup plain coconut yogurt (plus ¼ cup more for “clouds”)
- 1 cup coconut milk
- ½ cup frozen mango
- ½ cup frozen pineapple chunks
- 1 scoop vanilla protein powder
- 1 teaspoon blue spirulina powder
- Optional: ¼ cup ice cubes (for desired consistency)
- ¼ cup Garden Granola® Beetroot Ginger (for topping)
Instructions
- Cut the banana into chunks and freeze for at least 30 minutes or overnight.
- Add to a blender: frozen banana, frozen mango, frozen pineapple, coconut milk, protein powder, and blue spirulina. Blend until smooth. Add ice if needed.
- Use the back of a spoon to “paint” clouds inside a tall glass using ¼ cup coconut yogurt.
- Pour the smoothie into the prepared tall glass.
- Top with Garden Granola® Beetroot Ginger and serve immediately.
